Gölles Pear Balsamic Vinegar
This Austrian fruit balsamic is made by pressing and fermenting old cider-pear varieties, then aging the vinegar for four years in oak barrels. The result combines a pronounced pear character with the rounded sweetness of balsamic vinegar.
Use it with bitter salads, blue cheese, soft-ripened cheese or desserts. Gölles recommends pairing it with peanut, hemp, hazelnut, camelina or walnut oil.
Pears (fermented and aged into pear balsamic vinegar).
