Gölles Tomato Vinegar
This Austrian fruit vinegar captures the aroma and flavor of Styrian tomatoes, then rests for one year in stainless steel to retain freshness. Its tomato character suits Mediterranean cooking without the unsupported sweetness claims found in older copy.
Use it with mozzarella, arugula, tomato salad, tomato sauce, tomato soup and other Mediterranean dishes. Gölles recommends pairing it with safflower, pumpkin-seed or olive oil.
