Waldorf Salad with Apple Balsamic
This modern Waldorf salad combines crisp celeriac, fresh apples, grapes and toasted walnuts with walnut oil and apple balsamic vinegar. It is lighter than the mayonnaise-based classic while keeping the signature apple-celery-walnut combination.
Apple Balsamic Waldorf Salad Recipe
Serves: 4 Total time: about 30 minutes
Ingredients
- 1 small celeriac
- 2 crisp apples, such as Golden Delicious
- 50 g (1.8 oz) walnuts
- Seedless grapes, halved
- Cold-pressed walnut oil
- 4 tablespoons Gölles Balsamic Apple Vinegar
- Fleur de sel and coarsely ground black pepper
How to Make It
- Peel the celeriac and cut it into very fine matchsticks. Season lightly with salt and let stand for about 20 minutes, then blot away excess moisture.
- Toast the walnuts on a baking sheet at 320°F for about 8 minutes. Cool and break into pieces.
- Halve the grapes. Core the apples and slice them thinly immediately before serving.
- Drizzle apple balsamic over four plates. Lightly coat the celeriac with walnut oil, then arrange it with the apples, grapes and walnuts. Finish with pepper and fleur de sel.
What Makes It a Waldorf Salad?
The original Waldorf combination centers on apples, celery and walnuts. This European variation uses earthy celeriac and a fruit-forward balsamic dressing instead of a creamy mayonnaise dressing.
