Raspberry Strudel with STAUD’S Raspberry Preserves

A slice of fruit strudel makes an everyday afternoon feel like a café stop. Fresh berries give this filling texture, while raspberry preserves help bring the flavor together. Serve it warm or at room temperature with coffee, tea, or a spoonful of plain yogurt.

Makes: 1 strudel

Ingredients

  • 2 packages strudel pastry, prepared according to their labels
  • 400 g fresh raspberries
  • 80 g wholegrain or plain breadcrumbs
  • 100 g STAUD’S Raspberry Preserves
  • Seeds from 1 vanilla bean
  • 1 egg yolk, beaten

How to make it

  1. Heat a convection oven to 175°C / 350°F. Line a baking tray.
  2. Combine raspberries, breadcrumbs, preserves and vanilla.
  3. Layer the prepared pastry on the tray. Spread filling across it, leaving clear edges.
  4. Fold in the edges, roll up and brush with egg yolk.
  5. Bake for 20–25 minutes, until golden.
