Depending on the seasons and the fruits, the pace of work is different. Always intense, it requires rigor and vigilance at each stage of the manufacturing process. Thus, certain flavors may be unavailable during the year for climatic reasons (drought, frost) and out of concern for loyalty to our producers and to guarantee the quality of the finished product. The fruits are cooked the old-fashioned way in a copper cauldron, without coloring or preservatives.
