Golden Saffron Sauce with Fruit Vinegar
This golden saffron sauce turns a handful of ingredients into a bright, creamy accompaniment for seafood, poultry, pasta, and vegetables. Saffron brings color and aroma, mascarpone adds richness, and apricot or quince vinegar keeps the sauce lively.
Ingredients
- 1/2 cup (125 ml) root-vegetable stock
- A generous pinch of saffron threads
- A pinch of cayenne pepper or a little curry paste
- 2 tablespoons mascarpone
- Apricot or quince vinegar, to taste
- Salt and white pepper
- Tapioca starch mixed with cold water, optional
How to make golden saffron sauce
1. Infuse the saffron
Warm the vegetable stock slowly with the saffron threads. Keep it below a boil so the saffron releases its color and aroma gently.
2. Add spice and mascarpone
Season with cayenne or curry paste. Stir in the mascarpone until the sauce is smooth and creamy.
3. Finish with fruit vinegar
Add apricot or quince vinegar a few drops at a time. Season with salt and white pepper. The vinegar should brighten the sauce without making it sharply sour.
4. Adjust the texture
If you want a thicker sauce, bring it briefly to a simmer and whisk in a small amount of tapioca-starch slurry. Cook only until lightly thickened.
Coconut and lemongrass variation
Replace half the vegetable stock with unsweetened coconut milk and simmer gently with bruised lemongrass. Strain before adding the mascarpone and vinegar for a sauce suited to Asian-inspired dishes.
