Fillet Steak with Apple Balsamic Butter

A good fillet steak needs very little, but the right sauce can make it memorable. This recipe pairs pepper-crusted beef with small onions simmered in red wine and vinegar, then finishes the pan juices with butter and Gölles Apple Balsamic Vinegar.

The result is glossy, savory, and gently sweet. Serve it with mashed potatoes or celery-root purée for a special dinner that still feels grounded and comforting.

Why apple balsamic belongs with steak

Traditional balsamic brings sweetness and acidity to rich meat. Apple balsamic adds a round fruit character that is especially good with butter, caramelized onions, rosemary, and thyme.

Ingredients

Serves 4.

For the glazed onions

  • About 20 pearl onions, peeled
  • 2 tablespoons sugar
  • 2 cups dry red wine, preferably Zweigelt
  • 1/4 cup apple balsamic vinegar
  • 1/4 cup red wine vinegar
  • 1 sprig rosemary
  • 1 sprig thyme
  • Fine salt and coarsely ground black pepper

For the steaks and balsamic butter

  • 4 beef fillet steaks or filet mignon, about 7 ounces each
  • Coarsely ground black pepper
  • 2 tablespoons clarified butter or high-heat cooking oil
  • 4 tablespoons unsalted butter
  • 1/4 cup apple balsamic vinegar
  • Fine salt

How to make fillet steak with balsamic butter

1. Glaze the onions

Heat the sugar in a wide saucepan over medium heat until it turns light amber. Carefully add the wine, apple balsamic, and red wine vinegar. Add the rosemary, thyme, and pearl onions.

Partially cover and simmer until the onions are tender. Remove the onions and herbs, then continue cooking the liquid until it becomes syrupy. Return the onions to the pan, season with salt and pepper, and turn them in the glaze. Keep warm.

2. Sear the steaks

Heat the oven to 425°F. Pat the steaks dry and season them generously with coarsely ground pepper.

Heat the clarified butter in an oven-safe skillet over medium-high heat. Sear the steaks briefly on every side until well browned.

3. Finish in the oven

Transfer the skillet to the oven and cook until the steaks reach your preferred doneness. For food safety, the USDA recommends that whole beef steaks reach at least 145°F and rest for at least 3 minutes. Use an instant-read thermometer in the thickest part rather than relying on touch alone.

Move the steaks to a warm plate and let them rest while you make the sauce.

4. Make the balsamic butter

Carefully pour excess fat from the skillet, leaving the browned bits behind. Place the skillet over medium heat and add the butter. When it foams, stir in the apple balsamic vinegar and any juices released by the resting steaks.

Simmer briefly, scraping up the browned bits, until the sauce is glossy and lightly syrupy. Turn the steaks in the sauce, then season with salt.

5. Serve

Place a steak on each plate. Spoon over the balsamic butter and add the glazed onions. Serve with mashed potatoes, celery-root purée, roasted vegetables, or a crisp green salad.

Make-ahead tips

The onions can be prepared a day ahead and refrigerated in their glaze. Reheat them gently while the steaks cook. Make the balsamic butter at the last minute so it stays glossy and emulsified.

Can I use a different vinegar?

Apple balsamic gives this recipe its distinctive fruit and body. A good dark grape balsamic will work, but it will taste more familiar and less apple-forward. Avoid thin distilled vinegar here; it does not provide the same balance or texture.
