Just say quince, please! In our grandmother's day, the quince was universally known as the "lemon of the north." Today, however, it has almost disappeared from our minds. That's a shame, because as a vinegar, I'm an excellent substitute for fresh lemons and can enchant many a lover of Asian cuisine with my honey-sweet fruitiness.
Use me for: Asian dishes, fish, mayonnaise, hollandaise sauce, béarnaise sauce.
Pair me with: Peanut oil, linseed oil, sunflower oil
Acidity: 5%.
