The tree cake is the "king of cakes" and is a symbol of the pastry profession. Its production is extremely complex and shows the best craftsmanship - over an open fire!
Baumkuchen in its current form was already known in the 15th century. For a real tree cake, the dough is made from butter, eggs, sugar, vanilla, salt and flour, without baking powder! It is then applied in layers on a rotating roller: only when one layer is completely baked can the next be wiped over it, up to 20 times! This creates the typical look that is reminiscent of the annual rings of a tree. The icing on the cake is a delicately melting coating of milk chocolate.
Nowadays, Baumkuchen is of course no longer baked over fire, but in special baking appliances. As with our original Baumkuchen, of course, that doesn't affect the taste and quality!
