Le Bon Magot Brinjal Caponata (Purple Aubergine with Cumin & Curry Leaves) is a silky sweet-n’-sour relish. It has a natural affinity to alpine cheeses (esp. Comté, Gruyère (young), Challerhocker, Reblochon, Tête de Moine) and robust breads (e.g. sourdough, whole grain). It is delicious served with chickpeas, lentils, grilled fish, crustaceans and lamb.
Ingredients: Aubergine (eggplant), dark brown sugar, sesame seed oil, apple cider vinegar, garlic, ginger, spices, green chilies, sea salt, turmeric, fresh curry leaves.
