Emil Reimann Dresdner Stollen "Edition Frauenkirche" is the classic among the Christmas pastries and inseparable from the city of Dresden. The tradition of this Christmas pastry goes back to the 15th century. Over the generations, the Dresden Stollen has become what it is today - a baking tradition of the highest quality.
Selected raw materials such as German butter, rum-soaked sultanas and the best spices are the basic ingredients of the Emil Reimann Stollen dough, which is crafted by hand, lovingly, in the traditional Stollen form. After baking, the Stollen is buttered and refined with sugar.
The Dresden Frauenkirche was built by George Bähr between 1726 and 1743. The world-famous dome of the sacred building, the "Steinerne Glocke", is an architectural highlight. It has crowned and characterized the unique silhouette of the city of Dresden for many centuries. It was severely damaged by the air raid on February 13, 1945 and collapsed shortly afterwards. For many years it was just a ruin, a memorial to remind of the war, until it was rebuilt after reunification: on October 30, 2005, a festive consecration service took place in the new Frauenkirche. The ruin became a symbol of tolerance, peace and reconciliation.

In Germany, the Christmas Stollen is as much a part of Christmas as the Christmas tree or Lebkuchen. The tradition of this exquisite pastry probably goes back thousands of years, the first written mention of the Christstollen under this name was almost 600 years ago. From then on, its fame and popularity grew - even beyond the borders of Germany.
Also by tradition, the Stollen bakers guard their recipes like the apple of their eye: That is also the case with our bakers at Lebkuchen-Schmidt in Nuremberg. Nevertheless, they have revealed a little about the secret of its ingredients: The Christmas Stollen consists of finest yeast dough, into which numerous selected spices, nuts and of course raisins have been mixed - which ones and in what proportion they prefer to keep to themselves.
Of course, the Christmas Stollen has - again by tradition - the shape of the baby Jesus wrapped in a nappy and is sprinkled with lots of icing sugar, which is symbolic of the nappy.
