In 1860 Stefano Pernigotti opened a well know grocery store in Novi Ligure. The confectionary busy was very successful so in 1868 Stefano founded Pernigotti and Son, building a factory that would soon be turn into a landmark for the city.

In 1900, the company was seen as the most important confectionary production in the market with modern machines and more valuable the recipes.

In 1914 with the start of WW1, the use of sugar for the preparation of confectionary products was forbidden; with great intuition Paolo Pernigotti modified the nougat recipe replacing it with a concentrated honey obtaining a product with a unique taste and texture.
