Speculaas cookies, also known as windmill cookies, have a very long history. Similar types of biscuits were baked by the Germanic people who sacrificed it as a gift to their Gods. Also, the Romans already used several of the spices that are used in the typical speculaas spice mix nowadays.
In the 17th century spices were brought to Europe on a large scale by the Dutch East India Company and Amsterdam became the largest European trading center.
Because of increased availability the spice prices dropped and became more affordable. This inspired many bakers to experiment and create their own unique speculaas spice mix.
The traditional Dutch speculaas cookies were originally baked for consumption around St. Nicholas’ day (5th of December).
Ingredients: Wheat flour, sugar, vegetable fat & oil (palm, rapeseed), speculaas spices, glucose-fructose syrup, egg, raising agents (sodium bicarbonate, ammonium bicarbonate), salt, mono- and diglycerides of fatty acids, potato starch, sunflower lecithin, cinnamon, citric acid.
